Lunch Pizzas

Ingredients

  • 1 tortilla or pizza crust of choice (I love Siete cassava flour tortillas, or the cauliflower pizza crusts from Trader Joe’s)

  • 2 Tbsp pizza sauce

  • 1 pasture raised egg

  • 1/3 cup of shredded cheese (can be dairy free per preference)

  • seasonings: oregano, basil, red pepper flakes, and pepper

  • can add additional veggies (sautéd peppers, mushrooms, onions, etc.)

  • micro greens for topping

Directions

  1. On a baking pan, place tortilla or pizza crust and top with sauce spread it out evenly.

  2. Place cheese on top and create an area in the middle for the egg.

  3. Put whole egg in the center of the pizza.

  4. Top with seasonings.

  5. Turn oven on to low broil, and cook for ~5-7 minutes until egg is cooked.
