Papaya Boat

Ingredients

  • 1/2 papaya (with seeds scooped out)

  • 1/2 cup yogurt (can use plant-based too, or cottage cheese)

  • 1/4 cup granola

  • 1 TBSP hemp seeds

  • 1 TBSP ground flax seeds

  • 2 tsp of tahini (can sub sunflower butter, peanut butter, almond butter, or other nut butter of choice)

  • Dash of cinnamon

  • additional fresh fruit (berries) for toppings

Directions

  1. Slice whole papaya in half. This papaya came from Trader Joe’s. Choose one that is slightly soft. The color is not reflective of ripeness.

  2. Scrape out seeds.

  3. Fill papaya with toppings, and enjoy! If your plant-based yogurt is lower in protein, I would recommend pairing this breakfast with 2 hard boiled eggs, or another source of protein to provide lasting energy.
