Broccolini Pesto
In an attempt to try something new, I made broccolini. A bitter, spicy rendition on broccoli. I was surprised at the volume of greens on the stems. Instead of composting the leaves, I turned it into a pesto.
Swap the greens and nuts/seeds in this recipe to create your own rendition. Carrot top pesto, anyone?
Ingredients
2 cups broccolini greens
1/2 cup pumpkin seeds
1/3 cup avocado oil
2 Tbsp tahini
juice of 1/2 a lemon
2 cloves garlic, minced
salt + pepper to taste
Directions
In a food processor, add all ingredients and blend to desired consistency
Serve with pasta, eggs, or on a salad
