Broccolini Pesto

In an attempt to try something new, I made broccolini. A bitter, spicy rendition on broccoli. I was surprised at the volume of greens on the stems. Instead of composting the leaves, I turned it into a pesto.

Swap the greens and nuts/seeds in this recipe to create your own rendition. Carrot top pesto, anyone?

Ingredients

  • 2 cups broccolini greens

  • 1/2 cup pumpkin seeds

  • 1/3 cup avocado oil

  • 2 Tbsp tahini

  • juice of 1/2 a lemon

  • 2 cloves garlic, minced

  • salt + pepper to taste

Directions

  1. In a food processor, add all ingredients and blend to desired consistency

  2. Serve with pasta, eggs, or on a salad
