Perfect Banana Bread

The best banana bread

Ingredients

  • 3 ripe bananas

  • 1 cup almond flour

  • 1 cup gluten free flour

  • 1/3 cup coconut sugar

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 1 tsp cinnamon

  • 2 eggs

  • 1 cup Greek yogurt

  • 1/2 cup avocado oil

  • 1 tbsp maple syrup

  • 1 tsp vanilla extract

  • optional add ins (1 cup chocolate chips, walnuts, pecans, etc)

Directions

  1. Preheat oven to 350 degrees F

  2. In a large mixing bowl, mash 2.5 bananas with a fork, to applesauce consistency (save the other half of one banana to put on top of the loaf)

  3. In a small mixing bowl combine all dry ingredients (flours, sugar, baking soda, salt, and cinnamon)

  4. Add wet ingredients to mashed bananas, and mix together

  5. Add in dry ingredients to wet, and mix with a fork or with a mixer on low

  6. Fold in optional add ins (chocolate chips, nuts, etc)

  7. Spray loaf pan (8.5 in x 4.4 in) with avocado oil spray

  8. Pour in batter

  9. Top banana bread with 1/2 of the unmashed banana (cut length-wise)

  10. Bake for 50mins, or until center is cooked completely
